2 cups seedless watermelon cubed
1 cup orzo, cooked and cooled
1/2 cup feta cheese, crumbled
1/2 cup chopped parsley or basil
1 tablespoon extra virgin olive oil
s&p to taste
1. cook orzo, drain and let cool. 2. toss with watermelon, cheese and parsley. 3. drizzle with extra virgin olive oil and season with salt and pepper.

This looks delicious, healthy and easy. Yum. I sometimes mix watermelon with basil, mozzarella cheese, and balsamic vinaigrette.
